Food for Thought – April 7, 2015

One quarter of the year has passed. Hope you had a blessed Easter and didn’t get fooled on April 1st.

My daughter is on a gluten free diet. The following gluten free recipe is from Kroger.

Gluten Free Spaghetti with Roasted Cauliflower, Capers and Golden Raisins

1 box gluten free spaghetti

1/2 cauliflower, cut into small florets

4 Tbsp. + 2 Tbsp. for drizzling extra virgin olive oil

Salt & pepper to taste

1 cup onion, diced

1 Tbsp. capers (optional)

1/4 cup golden raisins soaked in 1 cup water (optional)

1 Tbsp. parsley, chopped

1/2 cup Parmigiano Reggiano cheese, grated

1) Preheat oven to 425 degrees and bring large pot of water to boil.

2) Toss cauliflower in 2 Tbsp. olive oil, season with salt and pepper.

3) Place on a sheet tray and roast in oven until golden brown.

4) Meanwhile, in large skillet saute onion in 2 Tbsp. olive oil.

5) Cook pasta per package directions.

6) Reserve 1 cup of cooking liquid and add to onions.

7) Add pasta to sauce and cook 1 minute over medium heat, stirring frequently until creamy.

8) Add cauliflower, capers, raisins and toss and serve.

Serves: 4.

Since I must have fish twice a week to slow macular degeneration, here is a Tilapia recipe from Kroger.

Broiled Parmesan Tilapia

Prep Time: 5 minutes

Total: 15 minutes

Serves: 4

3 Tbsp. butter, softened

3 Tbsp. plain Greek yogurt

1/4 cup shredded Parmesan cheese

Juice of 1 lemon

1/4 tsp. onion powder

Salt and pepper, to taste

4 tilapia fillets (4-6 oz. each)

Preheat oven broiler with rack 6 inches from heat. Line medium baking sheet with foil.

Coat with cooking spray. In small bowl, combine all ingredients except fish and mix well. Set aside.

Place fillets in single layer and broil 2-3 minutes. Flip fillets. Broil 2-3 more minutes.

Remove fish from oven and spread 1/4 of mixture on top of each fillet. Broil 2 more minutes or until topping is browned.

Serve. Refrigerate any leftovers.
