Food for Thought – April 8, 2014

Easter is fast approaching. If you are having guests, ham is the choice of the day. The following recipe is from Better Homes Our Best Recipes of 2003.

 

Ham with Five

Great Glazes

Prep Time: 15 minutes

Bake Time: 1-1/2 hours

1 (5-6 lb.) bone-in cooked ham (rump half or shank portion)

1 recipe glaze

1) Preheat oven to 325 degrees. Score ham in diamond pattern by making cuts at 1-inch intervals. Place on rack in shallow roasting pan. Insert meat thermometer in center, making sure bulb does not touch bone. Bake 1-1/2 to 2-1/4 hours, or until 140 degrees. During last 20 minutes brush ham often with desired glaze. Reheat any remaining glaze to pass with ham.

Makes 16-20 servings.

Raspberry-Chipotle Glaze: In medium saucepan, combine: 1-1/2 cups seedless raspberry preserves; 2 Tbsp. vinegar; 2-3 canned chipotle chili peppers in adobe sauce, drained and chopped; and 3 cloves garlic, minced. Cook and stir til boiling; reduce heat.

Simmer, uncovered, 5 minutes more. Makes 1-1/2 cups.

Chutney Glaze: In food processor or blender, combine one 12 oz. jar chutney, 1 tsp. finely shredded orange peel, 2 Tbsp. orange juice, and 1 Tbsp. mustard. Process or blend until almost smooth. Makes 1-1/2 cups.

Cranberry Glaze; In saucepan, mix one 12 oz. can cranberry juice concentrate, thawed; 3 Tbsp. Dijon mustard; 2 Tbsp lemon juice; 4 tsp. cornstarch; 1/4 tsp. ground cloves. Cook and stir until thick and bubbly. Cook and stir 2 minutes more. Makes 1-2/3 cups.

Maple-Pecan Glaze: In medium saucepan, combine 1 cup pure maple syrup and 1 cup orange marmalade. Heat and stir until bubbly. Stir in 1 Tbsp. butter. Stir in 1/2 cup chopped pecans, toasted. Makes 2-1/2 cups.

Honey-Orange Glaze: In medium saucepan, combine 1 cup packed brown sugar, 1/2 cup honey, 1/4 cup orange juice, 1/2 cup bourbon or orange juice, and 2 Tbsp. Dijon mustard. Cook and stir over medium heat until brown sugar is dissolved. Makes 1-1/2 cups.
