Food for Thought – August 27, 2013

Do you like chicken? I like better than my husband does. His all-time favorite meat is the pork chop, any way it’s fixed.

This is a great chicken recipe served with macaroni & cheese and a green salad.

Baked Chicken Parmesan

1/2 cup Italian bread crumbs

1/2 cup Parmesan cheese

4 frozen boneless, skinless chicken breasts, thawed

1 large egg, beaten and mixed with 2 Tbsp. water

2 cups tomato sauce

1 cup mozzarella cheese, shredded

1 tsp Italian seasoning

Preheat oven to 350 degrees. Combine bread crumbs and Parmesan cheese. Set aside. dip each chicken breast into egg mix, then press both sides into crumb mix and place in oven-safe baking dish. Evenly distribute tomato sauce and mozzarella over top. Sprinkle top with Italian seasoning. Bake in preheated oven 30 minutes, or until internal temperature of chicken is 170 degrees.

Serves: 4

Here is another meal you might enjoy. I had one the other night when Billy was at a Lion meeting.

Beef and Cabbage Wraps

8 (8-inch) flour tortillas

12 oz. lean ground beef

1/2 cup chopped onion (1 medium)

1 cup frozen whole kernel corn

1/2 to 2/3 cup bottled barbecue sauce

2 cups packaged shredded cabbage with carrots (cole slaw mix)

1) Wrap tortillas tightly in foil; place on baking sheet. Heat in 350 degree oven for 10 minutes, or until heated through.

2) Meanwhile, in large skillet, cook beef is brown and onion is tender. Drain. Stir in corn and 1/3 cup barbecue sauce. Cook and stir until heated through.

3) To serve, spread one side of tortillas with some of remaining barbecue sauce. Spoon about 1/2 cup filling on each tortilla. Add shredded cabbage mix. Roll to make wraps.

Makes 4 servings of 391 calories each.

The following is a great anytime pick-me-up drink.

Purple Cows

1 quart unsweetened grape juice

1 qt. vanilla ice cream

4 tall glasses

Fill glasses 2/3 full with grape juice. Add 2 scoops ice cream to each. Serve with iced tea spoons.
