Food for Thought – August 6, 2013

The other day I met a woman in the beauty shop who said she always reads my recipes, but there is never any she can use as she is single. Recipes may be cut down or increased as the need arises. Here is a salad for two, of which half may be refrigerated for the next day.

Carrot Raisin Salad

1/2 lb. carrots, shredded

1/2 cup golden raisins

1/3 cup plain yogurt

2 Tbsp. mayonnaise

1 tsp honey

Dash cinnamon, optional

Lettuce leaves

Combine all ingredients except lettuce in a small bow. Chill several hours or overnight. Serve in lettuce lined bowl.

Serves: 2.

Here is another salad which is a quick fix.

Sesame Chicken Salad

1/3 cup fat free mayonnaise

1 Tbsp. reduced sodium soy sauce

1/8 tsp. ginger

1-1/3 cups cubed cooked chicken breast

1/2 cup chopped fresh snow peas

1 small sweet red pepper, chopped

1 Tbsp. sesame seeds, toasted

4 lettuce leaves

1 Tbsp. chopped cashews

In small bowl, combine soy sauce, ginger and mayonnaise. Stir in chicken, peas, pepper and sesame seeds. Serve over lettuce leaves; sprinkle with cashews.

Serves: 2.

Tuna and Tomato Kabobs

2 Tbsp. lime juice

1 Tbsp. canola oil

1 Tbsp. reduced sodium soy sauce

3/4 tsp. grated lime peel

1 small garlic clove, minced

1/2 tsp. salt

1/2 tsp. dried parsley flakes

1/8 tsp. ground cumin

1/8 tsp. ground pepper

Dash cayenne pepper

1/2 lb. tuna steak, cut into 1-inch cubes

6 cherry tomatoes

6 medium fresh mushrooms

1) In large resealable plastic bag, combine first 10 ingredients; add tuna. Seal bag and turn to coat; refrigerate 30 minutes.

2) Coat grill rack with cooking spray before lighting grill. Drain and discard marinade. On two metal or soaked wooden skewers, alternately thread tuna and vegetables. For medium-rare tuna, grill, covered, 6-8 minutes, or until slightly pink in center, turning once.

Serves: 2 at 183 calories each.
