As I write this, I have not send out one Christmas card et. I hope by the time you read this I’ll have them all sent.
Kroger has some gluten-free recipes which I’ll pass along. One is for a pie and another for a cake.
Gluten-Free Pumpkin Pie with Almond Crust
Crust:
1-1/2 cups almond flour or almond meal
3 tsp butter, melted
2 tsp sugar
Filling:
2 large eggs
1 can (15 oz) pumpkin puree
1 can (12 oz) evaporated milk
3/4 cup sugar
2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp each, ground cloves and cardamon
1/2 tsp salt
Preheat oven to 350 degrees. In a small bowl, mix almond flour, butter and sugar. Pat evenly onto bottom and up sides of pie pan. Bake 10 minutes and let cool.
Beat eggs in large bowl with fork, then whisk in pumpkin, sugar, spices and salt. Stir in milk and mix well. Pour into pie crust. Bake 50-55 minutes, or until knife inserted near center comes out clean. Cool on wire rack; serve at room temperature or refrigerate until ready to serve. Refrigerate leftovers.
Serves 8.
Gluten-Free Cranberry Apple Upside Down Cake
1 cup fresh cranberries
1 large apple, peeled, cored and thinly sliced
2/3 cup brown sugar
1 tsp cinnamon
1/3 cup butter, melted
1 pkg (15 oz.) gluten-free yellow cake mix
Preheat oven to 350 degrees. Spray a 9-inch round cake pan with cooking spray. Sprinkle cranberries evenly onto bottom of pan, and arrange apple slices in concentric circle. Sprinkle brown sugar and cinnamon over apples and cranberries, and drizzle with butter.
Mix cake mix per directions. Gently pour cake mix over fruit. Bake 35-40 minutes, or until toothpick inserted near center comes out clean. Cool 10 minutes in pan, then invert cake onto serving plate.
Serves 8.
