Food for Thought – February 26, 2013

I’ll be glad to see February go.  With its rain, snow and cold winds it has acted more like March.  Following is a hearty soup from Michelle Curtis of Baker City, OR.  She says she serves it with corn break for dunking.

Lentil-Tomato Soup

4-1/2 cups water

4 medium carrots, sliced

1 medium onion, chopped

2/3 cup dried lentils, rinsed

1 can (6 oz) tomato paste

2 Tbsp minced fresh parsley

1 Tbsp brown sugar

1 Tbsp white vinegar

1 tsp garlic salt

1/2 tsp dried thyme

1/4 tsp dill weed

1/4 tsp dried tarragon

1/4 tsp pepper

In a large saucepan, combine water, carrots, onions and lentils; bring to boil.  Reduce heat; cover and simmer for 20-25 minutes or until vegetables and lentils are tender.  Stir in remaining ingredients; return to boil.  Reduce heat; simmer, uncovered, for 5 minutes to allow flavors to blend.

Yield: 6 servings of 138 calories each

Diabetic Exchanges: 1 starch, 1 lean meat, 1 vegetable

I found the perfect corn bread recipe in my Better Homes and Gardens Cook Book of 1962.

Perfect Corn Bread

1 cup sifted all-purpose flour

1/4 cup sugar

4 tsp baking powder

3/4 tsp salt

1 cup yellow corn meal

2 eggs

1 cup milk

1/4 cup soft shortening

Sift flour with sugar, baking powder and salt; stir in corn meal.  Add eggs, milk and shortening.  Beat till just smooth, about 1 minute. (Do not overbeat.)  Pour into greased 9″ x 9″ x 2″ pan.  Bake at 425 degrees for 12-15 minutes.
