Food for Thought – February 26, 2013

I’ll be glad to see February go.  With its rain, snow and cold winds it has acted more like March.  Following is a hearty soup from Michelle Curtis of Baker City, OR.  She says she serves it with corn break for dunking.

Lentil-Tomato Soup

4-1/2 cups water

4 medium carrots, sliced

1 medium onion, chopped

2/3 cup dried lentils, rinsed

1 can (6 oz) tomato paste

2 Tbsp minced fresh parsley

1 Tbsp brown sugar

1 Tbsp white vinegar

1 tsp garlic salt

1/2 tsp dried thyme

1/4 tsp dill weed

1/4 tsp dried tarragon

1/4 tsp pepper

In a large saucepan, combine water, carrots, onions and lentils; bring to boil.  Reduce heat; cover and simmer for 20-25 minutes or until vegetables and lentils are tender.  Stir in remaining ingredients; return to boil.  Reduce heat; simmer, uncovered, for 5 minutes to allow flavors to blend.

Yield: 6 servings of 138 calories each

Diabetic Exchanges: 1 starch, 1 lean meat, 1 vegetable

I found the perfect corn bread recipe in my Better Homes and Gardens Cook Book of 1962.

Perfect Corn Bread

1 cup sifted all-purpose flour

1/4 cup sugar

4 tsp baking powder

3/4 tsp salt

1 cup yellow corn meal

2 eggs

1 cup milk

1/4 cup soft shortening

Sift flour with sugar, baking powder and salt; stir in corn meal.  Add eggs, milk and shortening.  Beat till just smooth, about 1 minute. (Do not overbeat.)  Pour into greased 9″ x 9″ x 2″ pan.  Bake at 425 degrees for 12-15 minutes.

This last thought is one I concur with and wish I had written.  This poem is by Edna Massimilla.

Just Because He Loves Us So

I know our Father answers prayers.

I know He keeps us in His care.

And all His blessings overflow

Just because He loves us so.

He gave His Son at Calvary.

From sin this Savior set us free

And whosoever does believe

Shall eternal life receive.

He sent His Spirit here to stay…

Sweet Holy Spirit leads our way.

He wants the whole wide world to know

Just because He loves us so.
