Food for Thought – February 5, 2013

Groundhog Day is past, but there is still Ash Wednesday, Valentine’s Day and Presidents’ Day to come.  Next week I’ll give you some Valentine ideas, but today it is my husband’s favorite pork chop.

This recipe comes from Lisa Bynum of Brandon, MS.

Pork Chops with Herb Pesto

4 bone-in pork loin chops (3/4-inch thick and 7 oz. each)

1/4 tsp salt

1/8 tsp pepper

2 Tbsp water

1 Tbsp each, minced fresh rosemary, sage, thyme, parsley and basil

1 Tbsp olive oil

3 garlic cloves, minced

1) Sprinkle pork with salt and pepper.  In a small bowl, combine water, herbs, oil and garlic; brush over both sides of chops.  Cover and refrigerate for 1 hour.

2) Coat grill rack with cooking spray before starting grill.  Grill chops, covered, over medium heat or broil 4 inches from heat for 4-5 minutes on each side or until meat thermometer reads 160 degrees.

One pork chop equals 241 calories.

Diabetic exchanges: 4 lean meat, 1 fat.

Very good with garlic mashed potatoes and green salad.

My eye doctor said that to slow my macular degeneration I should have the good fish (less mercury) at least twice a week.  So here is a tuna recipe from Jan Huntington of Painesville, OH.

Grilled Tuna Steaks

2 Tbsp lemon juice

1 Tbsp olive oil

2 garlic cloves, minced

2 tsp minced fresh thyme or 1/2 tsp dried thyme

4 tuna steaks (6 oz. each)

1/4 tsp each, salt and pepper

1) In large reusable plastic bag, combine lemon juice, oil, garlic and thyme.  Add tuna; seal bag and turn to coat.  Refrigerate 30 minutes; turning occasionally.

2) Remove tuna; sprinkle with salt and pepper.  Grill tuna, covered, over medium-hot heat or broil 3-4 minutes on each side for medium rare or until slightly pink in center.

One tuna steak equals 218 calories.

Diabetic exchanges: 5 lean meat, 1/2 fat.
