If you are tired of turkey and ham, then this recipe is for you.
Monterey Beef Casserole
1 lb. ground beef
1/4 cup finely chopped onions
Seasoned salt
2 cans (8 oz. each) tomato sauce
4 cups taco-flavored tortilla chips
2 cups shredded monterey jack or cheddar cheese
1 can (6 oz.) sliced black olives, drained
Cook ground beef in skillet until lightly browned, stirring to break up meat. Drain off excess fat. Add onion and tomato sauce and simmer 5 minutes. Season to taste with seasoned salt. Place 3 cups tortilla chips in 2-quart casserole. Sprinkle with half of cheese. Pour meat sauce over cheese. Garnish with remaining chips. Bake at 350 degrees for 15-20 minutes. Top with olives before serving.
Serves: 4 to 6.

Spicy Winter Tea Mix
1-1/4 cups orange drink mix
3/4 cup sweetened instant tea
1/2 tsp. grated cloves
1/2 tsp allspice
23 oz. pkg lemonade drink mix
1 tsp. cinnamon
3 oz. pkg. apricot gelatin
9 oz. pkg. red cinnamon candies
Combine all ingredients and store in airtight container. Use 1 rounded tsp. per cup hot water. Yum!

Honey-Nut Bars
3 cups honey-nut cereal, such as Honey Nut Cheerios
1/2 cup unsalted, shelled sunflower seeds
1/2 cup raisins
1/2 cup salted, roasted peanuts
1/2 cup creamy peanut butter
1/2 cup honey
6 Tbsp. butter or margarine
Line 8-inch pan with foil. In large bowl combine first 4 ingredients; set aside. In small pot, heat peanut butter, honey and butter over medium-high heat; bring to boil. Pour over cereal mix; stir to coat thoroughly. Press firmly and evenly into pan. Cover with plastic wrap; refrigerate until firm, at least 3 hours or overnight. Cut into 2-inch squares. Store in regrigerator.
Serves: 16 at 201 calories each.
