While the weather is still nice, we need quick, easy meals so we can spend more time outdoors. The following recipes are from Kathleen Williams of St. Albans, WV.
Chicken Marinara
4 boneless, skinless chicken breast halves (1 lb.)
2 cups sliced fresh mushrooms
3 garlic cloves, minced
1 tsp.dried basil
1/2 tsp. Italian seasoning
1 jar (28 oz.) meatless spaghetti sauce
1/2 cup red wine or chicken broth
Hot cooked angel hair pasta or spaghetti
In nonstick skillet coated with nonstick cooking spray, cook chicken for 6 minutes on each side. Remove and keep warm. Add mushrooms, garlic, basil and Italian seasoning to skillet; saute until mushrooms are tender. Stir in sauce and wine or broth. Add chicken; cover and simmer 10 minutes or until heated through. Serve over pasta.
Serves: 4 at 322 calories each not including pasta.
Italian Bread Salad
4 slices Italian or French bread (1-inch thick)
2 Tbsp. olive or vegetable oil, divided
2 plum tomatoes, halved lengthwise and sliced
1 medium cucumber, seeded and chopped
2-3 green onions, sliced
2 Tbsp. shredded Parmesan cheese
Lettuce leaves
3 Tbsp. cider or red wine vinegar
1 garlic clove, minced
1/4 tsp. dried basil
Brush both sides of bread with 1 Tbsp. oil. Place on baking sheet. Broil 5 inches from heat for 1-2 minutes on each side or until lightly browned. Cut into 1/2-inch cubes. In a bowl, gently toss cubes, tomato, cucumber, onions and cheese. Divide among 4 lettuce-lined salad plates. In a small bowl, whisk vinegar, garlic, basil and remaining oil. Drizzle over salads. Serve immediately.
Yield: 4 servings.
Lemon Ice
1/4 cup raspberry preserves
2 Tbsp. orange juice
1 pint lemon ice or sherbet
Chocolate syrup
In a bowl, combine preserves and orange juice. Spoon 1 Tbsp. each into 4 dessert dishes. Top each with a scoop of lemon ice. Drizzle with chocolate syrup. Serve immediately.
Yield: 4 servings.
