Food for Thought – June 17, 2014

It’s the good ole summertime and you have to make something for the picnic. Following are two quick, easy, delicious recipes from Keebler.

 

Extra Servings 5 Minute Double Layer Pie

1 Keebler Ready Crust 2 Extra Servings Size Graham Cracker Pie Crust (9 oz.)

2 pkg. (6 serving each) or 3 pkg. (4 serving each) Jello Instant Pudding chocolate, lemon or other flavor

1 tub (12 oz.) Cool Whip Whipped Topping, thawed, divided

2 cups cold milk

Beat milk, pudding mix and 1/2 of whipped topping in medium bowl with wire whisk 1 minute. (Mixture will be thick.) Spread in crust. Spread remaining topping over pudding layer in crust. Refrigerate until ready to serve. Garnish as desired.

Serves: 10

Prep Time: 5 minutes

S’More Pie

1 Keebler Ready Crust 2 Extra Servings Size Graham Cracker Pie Crust (9 oz.)

12 oz. chocolate candy bar, broken in pieces

6 oz. hot fudge, warmed

30 regular marshmallows

3/4 cup milk

2-1/2 cups whipped cream (reserve 1 cup for topping)

Place chocolate bar, marshmallows and milk in saucepan over low heat. Stir constantly until chocolate and marshmallows are melted. Cool. Fold in 1-1/2 cups whipped cream into chocolate mixture. Spread thin layer of warm hot fudge over bottom of pie crust. Spoon (gently) cooked mixture into crust. Top with reserved whipped cream and garnish with chocolate syrup. Refrigerate 3 hours or until set.

Variations: Use a chocolate almond or chocolate peanut candy or simply add 1/4 cup nuts to chocolate mixture.

Prep Time: 15 minutes

Chilling Time: 3 hours

Cool Lemon Cheesecake Bars

Crust:

1 pkg. (18.25 oz.) Kroger Extra Moist Lemon Cake Mix

1/2 cup margarine, softened

Cheesecake:

2 pkg. (8 oz. each) cream cheese, softened

1/2 cup sugar

2 eggs

1 tsp. vanilla

Heat oven to 350 degrees. To make crust, blend cake mix and margarine with a fork until mix is crumble. Pat mixture into a 9” x 13” baking pan and set aside. Beat cream cheese and sugar in mixing bowl until smooth. Add eggs and vanilla; beat on medium speed until smooth and fluffy. Spread cream cheese mixture over crust and bake 35-40 minutes. Cool. Refrigerate and chill thoroughly . Cut into bars and serve chilled. Refrigerate any leftovers.
