We like the following zucchini recipe, which I’ve had for several years.
Stuffed Grilled Zucchini
4 medium zucchini
5 tsp. olive oil, divided
2 Tbsp. finely chopped red onion
1/4 tsp. minced garlic
1/2 cup dry bread crumbs
1/2 cup shredded mozzarella cheese
1 Tbsp. minced fresh mint
1/2 tsp. salt
3 Tbsp. grated Parmesan cheese
Cut zucchini in half lengthwise; scoop out pulp, leaving 1/4-inch shells.
Brush with 2 Tbsp. oil; set aside. Chop pulp. In large skillet, saute pulp and onion in remaining oil. Add garlic; cook one minute longer. Add bread crumbs; cook and stir two minutes, or until golden brown.
Remove from heat. Stir in mozzarella, mint and salt. Spoon onto zucchini shells. Sprinkle with Parmesan cheese. Grill, covered, over medium heat 8-10 minutes, or until zucchini is tender.
Yield: 4 servings of 186 calories each.

This last thought from Dorothy Manzlak.
The Lord’s peace, soft as a cloud,
Invades my very being.
Enveloping me in a shroud
Of a soft and airy feeling.
Light as a feather, I soar
Through mists of daily care.
No task, today, a heavy chore,
For in my heart, this peace I share.
