Food for Thought – June 18, 2013

In the good old summertime, the zucchini and summer squash are plentiful. They are also very good tasting and good for you, too!

This recipe has a mixture of vegetables.

Mediterranean Summer Squash

1/4 cup chopped onion

1 Tbsp. olive oil

1 small yellow summer squash, thinly sliced

1 garlic clove, minced

1 plum tomato, seeded and chopped

1/2 tsp. dried oregano

1/4 cup crumbled feta cheese

1/4 tsp each, salt and pepper

In a large skillet, saute onion in oil until tender. Add squash, zucchini and garlic; saute 6-8 minutes longer or until tender. Stir in remaining ingredients; heat through.

Yield: 4 servings of 69 calories each.

Diabetic exchanges: 1 vegetable, 1 fat.

We like the following zucchini recipe, which I’ve had for several years.

Stuffed Grilled Zucchini

4 medium zucchini

5 tsp. olive oil, divided

2 Tbsp. finely chopped red onion

1/4 tsp. minced garlic

1/2 cup dry bread crumbs

1/2 cup shredded mozzarella cheese

1 Tbsp. minced fresh mint

1/2 tsp. salt

3 Tbsp. grated Parmesan cheese

Cut zucchini in half lengthwise; scoop out pulp, leaving 1/4-inch shells.

Brush with 2 Tbsp. oil; set aside. Chop pulp. In large skillet, saute pulp and onion in remaining oil. Add garlic; cook one minute longer. Add bread crumbs; cook and stir two minutes, or until golden brown.

Remove from heat. Stir in mozzarella, mint and salt. Spoon onto zucchini shells. Sprinkle with Parmesan cheese. Grill, covered, over medium heat 8-10 minutes, or until zucchini is tender.

Yield: 4 servings of 186 calories each.

Diabetic exchanges: 1 lean meat, 1 vegetable, 1 fat, 1/2 starch.

After-Dinner Mocha White Chocolate

Heat 1-12/ cups 2% milk over medium heat until bubbles form. Do not boil. Place 3 oz. chopped white baking chocolate, 2 Tbsp. instant coffee granules, 1 tsp. vanilla in blender. Add hot milk; cover and process until frothy. Serve in mugs. Garnish with whipped cream if desired.
