I know it’s a little warm for chocolate, but is there ever a bad time? I was searching for something sweet to make that wasn’t a cookie or cupcake, and came across this recipe for Buckeyes. And, since I’m from Ohio, it just seemed like fate!

I adapted it a bit, as I found it required more melted chocolate than the original recipe listed. And make sure to take the balls off the rack as soon as you can, or they will stick.

Just remember, it’s hot, and the chocolates have no preservatives in them, so you have to eat them fast or they will melt in your hands! (like that’s a problem!) They keep very well in the refrigerator. Enjoy!

Chocolate-Covered Buckeyes (adapted from Taste of Home)

5 1/2 c confectioners’ sugar

1 2/3 c peanut butter

1 c butter, melted

6 c semisweet chocolate chips

1 tsp shortening

1. In a large bowl, beat the sugar, peanut butter and butter until smooth. Shape into 1-inch. balls; set aside.

2. Microwave chocolate chips and shortening on high until melted; stir until smooth. Dip balls in chocolate, allowing excess to drip off. Place on a wire rack over waxed paper; refrigerate for 15 minutes or until firm. Cover and store in the refrigerator. Yield: about 5-1/2 dozen.
