I hope you all had a great Memorial Day weekend! The weather was so beautiful that my friends and took to the trails, hiking both the Fairfield Forest and the Overlook Trails.

If you haven’t experienced the Fairfield trails, you are missing out! They are lovely, and these two are fairly easy.

We also found time to kayak around the lake.

Hope you enjoyed the great weather as well as all the activities around Fairfield during the long weekend.

I’ve been baking all morning for tonight’s Relay for Life at the Cumberland County fairgroounds.

So far, I’ve made two loaves of Citrus bread, blueberry muffins (of course), and this recipe for Chocalate Chip Blondies.

We’ll sell the goodies at our Exit Rocky Top booth to benefit the Relay, but I must sample them first, of course–just to make sure they are ok!

By the way, our Welcome Center is now open in our office in the White House on Peavine Road.

We’re stocked with brochures and schedules for local events, so please feel free to stop by and grab what you need, as well as a cookie, muffin, or brownie!

Chocolate Chip Blondies

1 1⁄2 c brown sugar

1⁄2 c butter, melted

2 eggs, lightly beaten

1 tsp vanilla extract

1 1⁄2 c flour

1⁄2 tsp baking powder

1⁄2 tsp salt

1 c semisweet chocolate chips

In a large bowl, combine brown sugar, butter, eggs & vanilla, just until blended. Combine flour, baking powder & salt; add to brown sugar mixture. Stir in chocolate chips. Spread into greased 13x9x2” baking pan.

Bake at 350° for 18-20 mins. or until a toothpick inserted near the center comes out clean.

Cool on a wire rack. Cut into bars. Yield: 3 dozen.
