Hope all you mothers had a great Mother’s Day. I was thinking now is a great time for salads. I don’t remember when I got the following salad, but you should like it.
Mediterranean Salad
Serves: 6
1 jar (12 oz.) marinated artichokes, drained, and 1/2 cup liquid reserved
2 Tbsp. chopped basil
2 red and/or yellow tomatoes, sliced
1/2 lb. fresh mozzarella, sliced
1 red onion, peeled, halved lengthwise and sliced
In small bowl combine reserved artichoke marinade and basil. Alternately arrange tomato slices and mozzarella on round plate. Place artichokes in center of plate. Top with onion slices. Drizzle with dressing. Garnish with chopped basil if desired.
Per serving: 260 calories.
Remember that onions are full of quercetin, a flavanoid that is proven to help reduce joint inflammation.

Garlic-Kissed
Broccolini
2 bunches broccolini, trimmed
2 Tbsp. roasted garlic-flavored olive oil
1/2 cup white wine
1/2 cup Parmesan cheese curls
2 Tbsp. toasted pine nuts
In 2 quarts boiling salted water, cook broccolini 1 minute; drain. In skillet over medium heat, cook oil 45 seconds. Add broccolini and white wine; cover and simmer 3 minutes, or until crisp-tender. Arrange on serving plate, top with Parmesan cheese and pine nuts.
105 calories each serving.
Smile when you remember that Parmesan cheese is a great source of phosphorus and calcium that replenish cavity-fighting enamel.
Gingered Fruit Toss
Serves: 6
1 small watermelon (about 3 lbs.)
2-1/2 cups fruit, like kiwi and pineapple, peeled and sliced
1 pint blackberries
2 Tbsp. ginger preserves
1 lime, zested and juiced
Remove top 1/2 of watermelon. Using melon baller, scoop out flesh. Cut decorative edge around rind. In large bowl, combine fruits, ginger preserves and 1 Tbsp. each lime zest and juice. Toss to combine. Spoon into shell. Garnish with mint sprig, if desired.
Per serving: 117 calories.
The carotenoids in kiwi improve vision by protecting eyes from ultra-violet rays.
