Food for Thought – May 21, 2013

it’s strawberry time in Tennessee, so I thought you’d like the following recipe which is great with strawberries. The recipe comes from Richard Hogg of Anderson, SC.

Cream Cheese Pound Cake

1-1/2 cups butter, softened

1 pkg. (8 oz.) cream cheese, softened

3 cups sugar

6 eggs

2 tsp. vanilla extract

3 cups all-purpose flour

1/2 tsp. baking powder

1/4 tsp. salt

Confectioners sugar

Sliced fresh strawberries and whipped cream, optional

1) In a large bowl, cream butter, cream cheese and sugar light and fluffy. Add eggs, one at a time, beating well after each addition. Combine dry ingredients; beat into creamed mixture until blended.

2) Pour into greased and floured 10-inch fluted tube pan. Bake at 325 degrees for 50-60 minutes. or until toothpick comes out clean. Cool 10 minutes before removing to wire rack. Cool completely. Garnish with confectioners sugar, strawberries and whipped cream, if desired.

Yield: 16 servings.

The following recipe is from the Cooking for Two test kitchen.

Strawberry Shakes

1/3 cup 2% milk

1-1/2 cups vanilla ice cream

1/2 cup frozen strawberries

1 Tbsp. strawberry preserves

In a blender, combine all ingredients; cover and process until smooth. Pour into chilled glasses; serve immediately.

Yield: 2 servings.

The following fruit salad from Rhonda Eads of Jasper, IN goes well at a church supper or any large gathering.

Fabulous Fruit Salad

1 medium honeydew, peeled, seeded and cubed

1 medium cantaloupe, peeled, seeded and cubed

2 cups cubed seedless watermelon

2 medium peaches, peeled and sliced

2 medium nectarines, sliced

1 cup seedless red grapes

1 cup halved fresh strawberries

1 can (11 oz.) mandarin oranges, drained

1 can (12 oz.) lemonade concentrate, thawed

1 pkg, (3.4 oz) instant vanilla pudding mix.

Mix all together and chill before serving.

Yield: 20 servings of 3/4 cup each.
