Food for Thought – September 17, 2013

On Saturday, September 7th, we were in Ohio about 25 minutes north of Cincinnati to se our granddaughter, Leah, get married. On Sunday, September 8th, we were in the Toledo area at our daughter, Charlene’s, to celebrate family birthdays. I found out Char is now on a gluten-free diet. So here is a gluten-free cake recipe from Kroger.

Gluten-Free Gingerbread Cake

2-3/4 cups gluten-free flour

2 tsp. baking soda

2 tsp. cinnamon

1 tsp. ginger

1/2 tsp. salt

12/ cup sugar

1/2 cup butter, softened

2 large eggs

1 cup molasses

1/2 cup hot water

3/4 cup buttermilk

Preheat oven to 350 degrees. Grease and flour 9″ x 13″ pan. In medium bowl, combine flour, soda, cinnamon, ginger and salt. Set aside.

In large mixing bowl, beat butter and sugar until light and fluffy. Add eggs; beat well. Stir in molasses and hot water; combine well. Add buttermilk, then stir in dry ingredients. Pour into pan. Bake 25-30 minutes, or until toothpick comes out clean. Serve warm with whipped topping.

The following savory pork chops from Shirley Tockey of Cleveland, OK. should make any husband happy.

Stovetop Pork Chops with Apples

1/2 tsp. salt

1/4 tsp. apple pie spice

1/8 tsp. ground nutmeg

1/8 tsp. pepper

2 bone-in pork loin chops (6 oz. each)

2 tsp. butter

1 medium onion, sliced

1 medium potato, peeled and thinly sliced

1 medium apple, sliced

2 tsp. cornstarch

3/4 cup unsweetened apple juice

Combine first four ingredients; sprinkle over both sides of chops. In skillet, brown chops in butter on both sides. Top with onion, potato and apple slices.

In a small bowl, combine cornstarch and apple juice until smooth; pour into skillet. Bring to boil. Reduce heat; cover and simmer 14-16 minutes, or until meat is no longer pink and potato is tender.

Serves 2 at 386 calories each.
