Some time ago, my sister-in-law, Renee’, sent me a cake recipe originally from Rhonda Pryor-Houk of Louisville, KY. So here it is.
Hawaiian Surprise Cake
Prep: 25 minutes
Bake: 30 minutes plus cooling
6 Tbsp. butter, softened
2/3 cup plus 1 tsp sugar, divided
2 eggs, separated
2 Tbsp. apricot preserves
1/2 tsp. orange extract
1-1/2 cups all-purpose flour
2 tsp. baking powder
1/4 cup vanilla or white chips
1/4 cup macadamia nuts, chopped
1 snack size cup (4 oz.) mandarin oranges, drained and chopped
1/4 cup chopped maraschino cherries
1/4 cup flaked coconut
Frosting:
1 pkg. (3 oz.) cream cheese, softened
1/4 cup butter, softened
1-3/4 cup confectioners’ sugar
1/2 tsp. orange extract
In small mixing bowl, cream butter, 2/3 cup sugar until fluffy, about 3 minutes. Add egg yolks and preserves; beat well. Stir in extract. Combine flour, baking powder and salt; beat into creamed mixture until combined. Stir in chips, nuts, oranges, cherries and coconut.
In another mixing bowl, beat egg whites and remaining sugar on medium speed until soft peaks form. Pour into 8-inch fluted tube pan coated with non-stick cooking spray.
Bake in preheated 350-degree oven for 30-35 minutes, or until toothpick comes out clean. Cool for 10 minutes before removing from pan to wire rack. Cool completely.
In small mixing bowl, beat cream cheese and butter until fluffy. Add confectioners’ sugar and extract; beat until smooth. Frost cake. Store in refrigerator.
Yield: 8 servings of 569 calories each.
Here is another cake recipe from Renee’ that is much quicker to make.
Dinah’s Cream Sherry Cake
1 box yellow cake mix
1 box instant vanilla pudding
Dash nutmeg
4 eggs
3/4 cup oil
1/4 cup cream sherry
Mix cake mix, pudding (dry), nutmeg. Add oil, eggs and cream sherry. Beat per cake mix directions. Pour into greased tube pan or (2) 8-inch round pans, greased. Bake in preheated 350-degree oven for 45-55 minutes. Test with toothpick. Cool. Frost as desired.
