Thanks to everyone who in any way made our 67th wedding anniversary a very enjoyable, memorable occasion.
Fall will soon be here and I am thinking of a potato pancakes. Here is a quick, easy, delicious recipe.
Potato Pancakes
2-1/4 cups frozen shredded hash browns, thawed
1/4 cup chopped onions
1 egg
1 tsp. dried dill weed
1/4 tsp salt
Dash pepper
1/4 cup vegetable oil, divided
Mix all ingredients except oil in medium bowl. Heat 2 Tbsp. oil in non-stick skillet over medium heat. Drip 1/2 cup of potato mixture in hot skillet and flatten into pancake shape with spatula. Cook 3-4 minutes on each side, or until golden brown. Repeat. Make 6 pancakes. Recipe may be doubled.
I like to serve with a dollop of sour cream on top and warm apple sauce on the side.

Awesome Apple Butter Cake
2-1/4 cups all-purpose baking mix
3/4 cup milk
1/2 sugar
1 large egg
4 Tbsps. melted butter, divided
2 cups Musselman’s Apple Butter
1/3 cup each, sweetended flaked coconut, chopped pecans and sugar
Preheat oven to 350 degrees. Grease an 8″ x 8″ baking dish. In mixing bowl, stir together baking mix, milk, sugar, egg and 2 Tbsp. melted butter. Pour 2/3 of batter into baking dish. Cover with apple butter. Drop remaining batter by spoonfuls onto apple butter layer. Combine coconut, pecans and sugar with remaining melted butter and sprinkle on top. Bake 50-55 minutes.
Serves: 9.
This quick, easy cheesecake is from the Domino Company.
Delightful Cheesecake
2 pkgs. (8 oz. each) reduced fat cream cheese, softened
2 eggs
1-1/2 cup Domino Confectioners’ Sugar
1 tsp. vanilla
2 cups reduced fat sour cream
1 prepared graham cracker crust
Preheat oven to 350 degrees. In large bowl, beat cream cheese until smooth. Beat in eggs, sugar and vanilla. Fold in sour cream and pour into crust. Bake 30 minutes. Turn off oven. Leave cake in oven 90 minutes to cool. Chill before serving. Makes 12 servings.
